An on-going list of notable applications for the Mac OS. Post a comment if you think that there is an application that should be added! All apps are free unless otherwise specified!
- Adium - Instant messaging client that can connect to aim, msn, jabber, yahoo, and more. Supports themes, sounds, and a ton of other really cool features
- Camino - “The Camino Project has worked to create a browser that is as functional and elegant as the computers it runs on. The Camino web browser is powerful, secure, and ready to meet the needs of all users while remaining simple and elegant in its design.”
- Cash Box - “Cashbox is an application designed to make managing your personal finances a breeze.”
- CSSEdit ($29.95) - Awesome CSS editor, well worth the money. Try the demo and see for yourself, one of my favorite programs.
- Coda ($79.99) - Just bought this badboy myself. It replaced all of my web programs including Smultron and CSSEdit which I was going to buy.
- DragThing ($29)- Make items on your Mac such as files, folders, applications, disks, URLs, clippings, and even windows, quickly and easily accessible, while taking up as little space on your screen as possible.
- Fan Control - Some MacBook (Pro) are just to hot for daylong use. Fan Control adjusts the minimum fan speed depending on the current CPU temperature. For safety, it leaves the original automatic fan speed control intact.
- HandBrake - An open-source, GPL-licensed, multiplatform, multithreaded DVD to MPEG-4 ripper/converter, available for MacOS X, Linux and Windows.
- Hey Folders! - Color icons for color labels. Hey Folders! adds colored folder icons to Apple’s Finder. Instead of a generic icon, labeled folders show up in the appropriate color.
- Poisoned - A great file sharing program that connects to almost every network. Poisoned connects to the FastTrack network (Kazaa, Grokster, iMesh), the Gnutella network (Limewire, Acquisition), and OpenFT.
- RCDefaultApp - A free preference pane that allows you to set all of the default applications in one easy spot.
- Shiira - Shiira is a web browser based on Web Kit and written in Cocoa. The goal of the Shiira Project is to create a browser that is better and more useful than Safari. All source code used in this software is publicly available.
- Transmit 3 ($29.95) - A great ftp client that makes uploading files to your webserver a snap.
- Uno - Allows user to change the appearance of application windows to “unify” the Mac OsX interface.
- Virtue Desktops - a virtual desktop manager for Apple’s Mac OS similar to the famous “Parallels“.

Virtue desktops has nothing to do with parallels, one is a multi desktop environment, the other is an emulation/virtualization solution to run windows programs.
As far as how you can have different “segments/spaces” on your computer. I know both virtue desktops and parallels has that option. You are correct though that Virtue desktops does not allow you to run Windows programs on a Mac.
